Heat 1 tbsp butter in a pan and fry onions till they turn soft and add the mixed vegetables in and sauté them for a minute or two.

Now add some red chilli powder and ½ tsp salt. Mix well and keep the cooked vegetables aside.

To make the white sauce, heat 2 tbsp butter and add 2 tbsp flour and stir till the flour turns light brown.

Remove from the fire and gradually pour milk while stirring. Also, add ½ tsp salt and ¼ tsp pepper to the sauce and now cook it till it thickens. The white sauce is ready,

Blend the cooked spinach in a mixer to a puree.

Beat the cream lightly, then add the white sauce and spinach puree to it. Stir the spinach in.

Now, mix the vegetables with this sauce. Add some grated cheese to it and mix everything well.

Pour the vegetables and sauce in a greased baking dish and sprinkle the rest of the cheese on top.

Bake this in a preheated oven at 220 C for 15-20 minutes or microwave on high till the cheese melts.
